How to Make Strawberry Apple Pie

Oh.

My.

Word.

Yes it is that delicious!

I mean....
Just look at those berries!

Are you drooling yet?  I am!

We must make this!
NOW!!

Strawberry Apple Pie

Ingredients
1/2 cup Sugar
2 tbsp Potato starch (or 3 tbsp Corn starch)
2 1/2 cups (4-5 medium) Apples  (I love Courtland apples for pies!)
1 lb (2 pints or 454g) Strawberries
1 tbsp All purpose flour

How To
1. In a medium bowl combine the sugar and starch.  Peel and slice the apples.  Chop and hull the berries.  As the apples and berries are cut combine them with the sugar and starch.  Let sit 30 minutes.

2. Make pie shell.  Click here for a butter pie shell recipe or here for my my very own amazingly simple pie crust recipe.  And here are detailed instructions on how to roll your pie shell. Of course you can also buy a store made pie shell.  Those work too.  *grin*

 3. Sprinkle flour on the bottom pie shell then add the apple berry filling and all the juices from the bowl.

4. Pre-heat oven to 400F.
5. Bake on the middle rack for 35-40 minutes (until crust is golden brown).

And now you can eat your delicious pie!

Hooray for pie!!

The hardest part is not eating the whole pie in one sitting.
Seriously!

Andrea

How to Make Apple Crisp

I love this recipe!

Simple.  Easy.  And smells like "home".

(The best part of this recipe is sneaking a small piece of crisp topping.
So delicious!  And no one will notice a tiny piece missing.
Right?)

I had some apples that needed to be used up and I thought of this recipe.
It is a great recipe for the Fall.
And there's a good chance you already have all the ingredients on hand too.
Win-win! *wink*

All you need are oats, flour, butter, brown sugar, cinnamon and (of course) apples!  This works with all kinds of apples.  I like Royal Gala's the most.  MacIntosh apples may not work well with this recipe.  I have found in the past they get very mushy when cooked.
I have also included a butter substitute in the ingredients list if needed.  The cost of butter recently went up a whole dollar a pound in my neck of the woods.  A dollar!  So now I only buy it when it's on sale.  Great news:  butter freezes really well!  But when there hasn't been a sale that means that, sometimes, I need to do without.

So without further ado, the recipe....

Ingredients
1 tsp Cinnamon
2 Tbsp Brown Sugar
5 whole Apples, peeled and sliced (this is flexible.  More can be added if desired)

1 cup Oats
1/2 cup Flour
sprinkling of Salt (can be omitted)
1/4 cup Brown Sugar
1/3 cup Butter, melted (Substitute: 3 Tbsp milk and 2 Tbsp oil)

How To
1. In a medium oven-proof bowl combine the cinnamon and sugar.  As you peel and slice the apples coat them in the cinnamon sugar mixture.  This will prevent the apples from browning.  Set aside.

2. In a small bowl combine remaining ingredients.  Mix until resembles coarse meal.  Spoon crumble over cinnamon sugar apples.  Press crumble down firmly. (Some bits of apple may poke through.  Don't worry about those.  It will still be delicious!)

3. Bake at 350F for 30 minutes.

My family loves eating apple crisp!
And I know you'll love it too!!

Happy thoughts,
Andrea

How to Make Easy Homemade Chicken Soup

This is so delicious and so easy!

When your cupboards are bare
and you don't know what to make for dinner,
make this!

Whenever I make chicken for supper, I like to cook a little extra
or set aside a little bit to be used in this great soup recipe.

Ingredients:
(These are extremely flexible.  Add as much or as little chicken/turkey as you have on hand.  I've even made this soup with just an onion and noodles.  It was my husband's favorite! Be sure to keep the seasoning the same.)

1 Tbsp oil
2 Rib of celery, chopped
1 Onion, chopped

10 cups Water
2 Chicken bullion (or try this method)
1/2 - 1 cup Shredded chicken
1 Tbsp Salt
1 tsp Pepper
1 cup Carrot, chopped

1 cup Noodles

How To:

1. Place oil, celery and onion in a large pot on medium heat.  Stir until browned.
2. Add remaining ingredients (minus noodles).  Bring to a boil.  Turn down and simmer 30 minutes.
3. Add noodles.  Stir occasionally.  Cook another 15 minutes or until noodles are tender.
4. Serve with homemade bread! *wink*

My kids always ask for seconds!
Tasty.
Flexible.
Easy.

Love it! *little clap*

Andrea
